A table on the canvas is not a grid of text. Every column has a type, and the type decides how its cells are entered, displayed and sorted.
Set a column's type from its header menu. They are grouped by how you enter a value.

A status column is not text that happens to say "In progress" — it is a real value, which is what lets a board be sorted, filtered and read at a glance, and what lets the AI extend a table sensibly rather than guessing what a column is for.
Switching a column to Labels, Status, Person or Document opens its picker immediately, because an empty picker cell gives no hint that it opens one.
The AI can add a column, or rewrite cells, in a table you already have, rather than redrawing the whole thing. Ask for "a status column and an owner for each row" and it extends the table in place.
